Sir, step away from that Yuca!

Yuca or Cassava or Arrow Root or Tapioca or whatever is one of my favorite tubers of the Caribbean region. My favorite is fixed up Cuban style covered with mojo, but I tried a cheese and ham gratineed version of it once in Tortola, that wasn’t half bad.

Anyway, would you take a look at this:

I have never seen a Yuca of this size before. The ones I buy in the Arab supermarket here in Denmark are about the size of half a human arm.

Contó Chiqui (pictured) who lives near Colon in Panama planted it about 2 and a half years ago. He needed a friend of his to help dig it out, but it still took them 3 hours. He shared it with friends and family.
